Gluten-free Banana Nut Bread

Ingredients:

  • 1 cup mashed bananas
  • 1/3 cup oil or melted butter
  • 1/2 cup honey or brown sugar
  • 2 eggs, beaten
  • 1 cup brown rice flour
  • 3/4 cup oats
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/4 cup hot water
  • 1/2 cup chopped nuts

Directions:

  1. Beat oil and honey together. Add eggs, mix well.
  2. Stir in bananas.
  3. Add sifted dry ingredients alternately with hot water; mix until smooth.
  4. Bake in greased 9x5x3″ loaf pan at 325 for 55-60 minutes.
  5. Cool on a wire rack for 1/2 hour before slicing. Freezes well.
